    Food Production Manager

    Cape Fish is company that specialises in the production of fresh & frozen seafood to the restaurant, wholesale & retail market in and around South Africa. A business with a relatively small footprint due to specialisation in the respective fields however, the short term goal is to achieve consistent export.  

    Job description and responsibilities

    • Manage & develop fundamental HACCP procedures and protocols within the facility
    • Review & develop the overall HACCP plan
    • Ensure that all daily, weekly & monthly checklists are kept up to date and non-conformances created & kept on file
    • Hold & structure internal meetings with other employees that are in positions relevant to the HACCP procedures & protocols within the facility.
    • Manage the facility & arrange all repairs and maintenance that need to be attended and address issues as they arise
    • Ensure that the relevant HACCP requirements for the facility are met.
    • Generate & finalise production reports on any and all processing of fresh or frozen product within the facility; This to include the relevant HACCP process controls & standard internal yield reports
    • Work hand in hand with 2 managers & the director on a daily basis
    • Create a 360 filing system that encompasses all of the afore mentioned documents
    • Be able to manage other employees that work within HACCP & essentially build a strong team within this environment
    • Be able to split time between operations / facility and office-based work

    Key requirements

    • Food science degree or similar
    • HACCP trained & certified
    • Any other form of relevant food safety training & degrees
    • Proficient in MS office / Excel
    • Detailed planner, highly organised, proactive nature, zero procrastination
    • Exceptionally strong administration skills
    • Strong communication skills (written and verbal)
    • Ability to work off a systems approach with detailed recording for future proof planning
    • Proactive & reactive problem solving

    Additional  requirements

    • A basic understanding of seafood & some simple knowledge on processing and yields
    • Management of staff within the HACCP Team / staff development & training
    • Driver’s license + own transport
    • Ability to self-train and educate on areas of uncertainly or lack of knowledge
    • Hands on approach – not afraid to get their hands dirty
    • Be able to multitask and prioritize
    • Ability to connect and work with people from different backgrounds and cultures across all ages
