    Compliance Officer

    Job Purpose    

    • The Compliance Officer is to monitor compliance with and adequacy of all the regulatory training policies, processes and procedures relating to South African Civil Aviation Regulations, applicable foreign regulations, IOSA and ISAGO standards and SAA standard operating procedures, through the conduct of inspections to proactively identify undesirable conditions and applicable areas requiring improvement.
    • The role is further responsible for interaction with the subject matter Regulatory Trainers and the Manager Regulatory Training to recommend and initiate training manual reviews and updates, to ensure the principles of continual improvement are applied within the Regulatory training department. The role will also support Regulatory Training revenue generation initiatives by assisting to market and administrate the training.

    Principal Accountabilities    

    • Assist in designing, developing and implementing training policies to ensure staff Regulatory learning and development programmes are aligned with legislative, organisational and employee needs and/or requirements
    • Assist in developing training manuals and assessments for staff and third parties that will ensure they are in compliance with national and international regulations and organisational standards
    • Drive and achieve departmental compliance with legislated requirements, including IOSA, CAA and other safety audit requirements, and organisation's strategic objectives
    • Continuously update departmental policies, procedures and workflow processes and monitor compliance thereof to ensure seamless functioning of the department
    • Compile training reports and statistical data as required
    • Maintain a document control system, aligned to the relevant organisational policies, to ensure that the correct version of training related documents is utilized by trainers
    • Help ensure compliance to CAA legislation to achieve renewal of the Aviation Training Organisation (ATO) certificate
    • Review and update course curricular objectives and training material on a regular basis and ensure compliance to regulations and best practice
    • Maintain a Quality Control System:
    • Manages projects to contribute to the optimisation of the Regulatory Training function
    • Correlate and analyse training data received, compile reports and make recommendations for improvements
    • Act as an audit guide during the conduct of audits on the Regulatory Training Department at the behest of the Manager Regulatory Training
    • Develop a quality control schedule, based on the requirements identified in the applicable training procedure manuals, with the guidance of and for approval by the Manager Regulatory Training
    • Markets Regulatory Training to support revenue generating initiatives
    • Manages contracts with internal and external Regulatory Training clients
    • Ensures all external and internal training is compliant with all regulatory requirements

    Qualifications & Experience    

    • Relevant Bachelor’s degree in Compliance and/ or related field at NQF level 7
    • 3 -5 years’ experience in a compliance role

    Sous Chef Pastry

    Job Purpose    

    • To support the Head Chef in leading the pastry and bakery section, ensuring the production of high-quality baked goods and desserts for all airline flights. The role ensures adherence to airline menu specifications, food safety standards, and production timelines, while driving operational efficiency and team performance.

    Principal Accountabilities    

    • Plan and oversee daily production based on airline schedules and forecasted volumes
    • Place and manage stock orders using system figures and recipe interpretation
    • Ensure effective stock management, including FEFO/FIFO practices and participation in stock takes
    • Maintain accurate SAP system functions: stock reservation, production order confirmations, and stock reconciliation
    • Create job cards and ensure output aligns with recipe specs and quality standards
    • Monitor extras, ensure sign-off and handover to the uplift team
    • Lead daily meal tastings and ensure spec compliance (portion control, plating, etc.)
    • Innovate and contribute to the creation of new dessert items and baked products
    • Lead and supervise a team of pastry and bakery staff 
    • Set and monitor performance targets aligned with production objectives, and review individual and team performance; address gaps and drive improvements
    • Manage shifts, weekend standbys, and irregular hours as required
    • Participate in recruitment, training, and mentoring of kitchen staff
    • Design and implement effective shift schedules based on production plans and flight schedules
    • Coordinate with QC and stores to manage expiry dates and ingredient usage
    • Escalate deviations following proper procedures and ensure resolution

    • Enforce food safety and hygiene standards (HACCP, FSSC 22000)

    Qualifications & Experience

    • 4–6 years experience in the catering and hotel industry, airline industry will be preferential
    • 2–4 years experience in a professional pastry kitchen with skills in:
    • Laminated doughs
    • Mousses and plated desserts
    • Chocolate tempering

    • SAP system experience is advantageous
    • Food Safety Management experience

    Sous Chef Halaal

    Job Purpose    

    • Working closely with and reporting to the Head Chef, the Halaal Section Chef is responsible for managing and supervising Halaal food preparation and production in strict compliance with Islamic dietary laws and FSSC 22000 food safety standards. This role ensures the consistent delivery of safe, high-quality, and certified Halaal meals for airline services.

    Principal Accountabilities    

    • Schedule and coordinate daily activities and output for the Halaal kitchen
    • Ensure production control aligned with daily flight schedules and planning forecasts
    • Maintain proper stock levels of Halaal ingredients; coordinate with procurement to avoid shortages
    • Enforce operational systems and control measures for efficiency
    • Place stock orders on time using system-generated data
    • Interpret recipes to support bulk meal production and accurate forecasting
    • Create job cards and manage production in accordance with approved specifications
    • Lead daily meal tastings and compliance checks on portioning and presentation
    • Ensure all extras are signed off and handed over correctly to the uplift team
    • Fulfill SAP requirements: stock reservations, production confirmations, and stock takes
