REQUIREMENTS:
Minimum Grade 10 with at least 3 - 5 years’ experience in a foodservice unit in a hospital environment. Inherent requirements of the job: Ability to work shifts, weekends, and public holidays. Ability to lift heavy objects and be on their feet the entire day. Dress according to departmental specifications and adhere to Hospital Policy.
Correct Interpretation of recipes, production planning and daily statistics. Computer literacy will be an added advantage. Pretoria residents will be preferred. Competencies (knowledge/skills): and numerical skills. Knowledge of mass production and cooking methods for both normal and therapeutic diets.
Knowledge of food handling, food safety and hygiene, Occupation Health and Safety and HACCP principles. Sound organizing, interpersonal, and communication skills. Ability to work according to rules and policies to meet deadlines. Ability to work independently and under pressure.
Duties :
General supervision of operational food services. Responsible for the receiving, storage, issuing and maintaining of stock control. Assist with cost control measures (key control measures). Responsible for supervision of production processes (pre-preparation and preparation of food for both normal and therapeutic diets), dishing up, food portion control distribution of meals and meal serving meal call backs. Assist with client satisfaction survey and plate wastage. Supervise personal hygiene, cleaning & occupational health and safety.
Supervise the maintenance and control of apparatus and equipment. Maintain temperature control charts. Supervision of subordinates. Perform routine tasks in the food service unit. Ensure that patients are provided with a balanced diet by adhering to daily meal plans available at food service. Care and report lost/faulty equipment, as well as any observed risks.
Relieve other Supervisors' staff members on request and execute any lawful additional task issued by a supervisory person. Perform Administrative duties in the department, such as ordering food, consumables, and equipment in the food service unit, and undergo food service work-related training with on-job training.
Ensure all staff supervised by you are contracted and monitored as per PMDS policy. Partake in all Audits within the department. Attend meetings and report to the superiors/managers. Periodical inspection of sections.
