    Regional Executive Chef

    • Primarily you will be responsible for developing and planning menus, creating and standardising recipes as well as food purchase specification. You will also coordinate, execute, supervise and evaluate all the food production activities of a fast-paced operation at a Regional level. The Regional Executive Chef will assist in the management of strategic and day-to-day operations. You will lead a team of food specialists to ensure our product offering is maintained at the highest quality standard.

    Education, Experience, Knowledge Skills and Competencies required:

    • A relevant tertiary qualification in Culinary Arts or Food and Beverage is essential for success in this role
    • A minimum of 5 years’ experience leading a culinary team or managing a commercial kitchen is required
    • Previous experience working with budget guidelines and standardising quality
    • Innovation in Menu Design as well as planning and costing same is required
    • Previous experience training teams of cooks and chefs is advantageous
    • Menu planning for special events and theme days also required
    • Knowledge of catering environments ranging from canteens to fine dining
    • Strong financial acumen with proven budget management and food control practice experience

    Key areas of responsibility:

    • Menu planning and development
    • Establish recipes and food purchase specifications
    • Coordinate, execute, supervise and evaluate all food production activities of a fast-paced operation
    • Assist in the management of the strategic and day to day food operations
    • Food innovation which includes the design of innovative menus for all industries, events and promotions
    • Sourcing unique ingredients for all menus, in line with approved product lists
    • Ensuring that the quality of food is consistently high and that hygiene standards are exceeded
    • Organising, recruiting, training and motivating all staff
    • Assisting kitchen staff with food prep and recipe creation
    • Participate as an integral part of the overall vision and plan for the food business strategy
