The successful incumbent will be reporting to the Executive Chef and will be required to perform duties to ensure the upkeep of the Canteen area. The successful incumbent will Prepare ingredients for cooking, including portioning, chopping and storing food, while maintaining the quality and standards of the Westin Cape Town Hotel within a pressurized environment in accordance with Marriott International Policies and Procedures.
Education and Experience
Recognized appropriate qualification advantageous
6 – 12 months’ experience in a canteen/kitchen or a similar position within a 5 star environment
Competency of all relevant cookery skills
Able to work flexible hours and shifts
Ability to work within a pressurized environment
Proactive, self-motivated Individual with good professional work ethic
Ability to work with limited supervision
Team orientation
Ability to manage and work with high volume work load
Sound understanding of all health & safety regulations
Key Responsibilities
Prepare and cook food according to recipes, quality standards, presentation standards, and food preparation checklist
Preparation and service of hot and cold dishes: Serve food in proper portions into proper containers.
Wash and peel fresh fruits and vegetables
Ensure the highest standards of hygiene and quality are maintained throughout the Canteen and kitchen: wash and disinfect kitchen area, tables, tools, knives, and equipment.
Follow all company and safety and security policies and procedures;
Ensure uniform, nametags, and personal appearance are clean, hygienic, professional and in compliance with company policies and procedures
Develop and maintain positive and productive working relationships with other employees and departments.
Prepare all potentially hazardous foods at the correct temperature according to the HACCP guidelines.
Monitor the quantity of food to control food waste and ensure that good food is not thrown away.
Wash and disinfect kitchen area including tables, tools, knives, and equipment to ensure sanitary conditions and meet the departmental standards, including using sanitizers required by health department.
Follow and ensure compliance with sanitation and cleaning procedures and pest control guidelines, reporting pest control issues to appropriate personnel.
Set-up and break down work station.
Follow and ensure compliance with food safety and handling policies and procedures, such as product rotation, First In-First Out (FIFO); dating, labeling, cleaning, and organizing coolers/freezers/storage areas; and Cold Chain compliance, across all food-related departments and areas.
Report maintenance issues immediately to appropriate personnel (i.e., management or maintenance).
Communicate any assistance needed during busy periods to the Chef to ensure optimum service.
Operate ovens, stoves, grills, microwaves, and fryers to prepare foods.
Speak to guests and associates using clear, appropriate and professional language.
Assist where necessary within the Canteen Department.
