F&B and Experience Director (BM_F&BDir) at Dream Hotels & Resorts

Job Overview:

• The F&B and Experience Director is a senior resort leadership role accountable for the end-to-end design, commercial performance and operational delivery of Blue Marlin's all-inclusive food and beverage operation and the overall guest experience. The Director ensures that dining, bars, pool and leisure service, resort activities and entertainment are intentionally connected into one cohesive holiday experience, while the Entertainment Manager retains direct operational responsibility for the entertainment department and programme.
• This role requires a highly visible, hands-on leader who can operate strategically while remaining close to daily execution across breakfast-to-late-night service and the broader guest journey. The successful candidate must have demonstrable all-inclusive resort experience, with exposure to Club Med-style, resort-club, cruise, island resort or similarly experience-led hospitality environments strongly preferred.
• The Director will set operating standards, lead the F&B management team, own F&B budgets and profitability, and provide senior oversight of how food, beverage and entertainment touchpoints connect from the guest's perspective. The role does not replace or duplicate the Entertainment Manager: the Entertainment Manager owns the planning, staffing and day-to-day delivery of entertainment, while the Director aligns that programme with F&B, resort atmosphere and the overall guest experience.

Experience and Qualifications

• Diploma or Degree in Hospitality Management, Hotel Management, Food & Beverage Management or a related field; an additional qualification in guest experience, events or leisure management is advantageous.
• Minimum 7-10 years of progressive hospitality leadership experience, with at least 3-5 years at senior F&B leadership / director level in a high-volume resort, hotel or hospitality environment.
• Demonstrable all-inclusive resort experience is essential. Experience in Club Med, resort-club, cruise, island resort or similarly experience-led all-inclusive environments is highly advantageous.
• Proven experience leading multi-outlet F&B operations across restaurants, bars, pool areas, functions and high-occupancy periods.
• Meaningful experience integrating F&B with resort activities, entertainment and broader guest-experience delivery; direct entertainment-management experience is advantageous but not essential.
• Strong knowledge of shift planning, rostering, labour deployment, workforce productivity and duty-management structures.
• Strong financial acumen: budgeting, forecasting, P&L interpretation, menu engineering, stock control, food and beverage cost management and supplier negotiation.
• Proficiency in MS Office and relevant restaurant/POS/stock-management systems. Experience with HTI, Plus Point, Plus Central and Apex is advantageous.
