    Junior Sommelier

    Key Responsibilities:

    • Studying wine regions, grape varietals, vinification techniques, and vintage variations. 
    • Attending wine tastings and training sessions to deepen knowledge. 
    • Familiarizing themselves with the restaurant's wine list and its pairings with menu items. 
    • Properly opening and pouring wine bottles 
    • Presenting wine to guests, explaining its characteristics and origin 
    • Taking wine orders and accurately delivering them to tables 
    • Answering guest questions about wine with confidence 
    • Monitoring wine stock levels and ensuring proper storage conditions 
    • Rotating stock to maintain quality 
    • Ordering new wines as needed 
    • Assisting with wine list updates and development 
    • Preparing wine for special events and private dining 
    • Educating other service staff on wine knowledge and pairing recommendations 
    • Maintaining cleanliness of wine cellar and glassware 
    • Following all beverage service standards and regulations 
    • Completing necessary paperwork related to wine inventory and sales 

    Qualifications & Skills:

    • Passion for wine and a strong desire to learn
    • Basic wine knowledge or completion of a wine course
    • Excellent customer service skills and ability to interact with guests confidently
    • Attention to detail and ability to work under pressure
    • Strong communication and interpersonal skills
    • Ability to work flexible hours, including evenings and weekends

    Chef De Partie

    KEY FOCUS AREAS

    Scope of Work

    • Prepare food to the highest standard in line with the property
      food directive
    • Supervising and training of the kitchen staff in line with the property food directive, ensuring food preparation to the highest standard.
    • Assist in effective Kitchen Administration as directed to minimize shortages and wastage and effective stock control.
    • Assist in performing effective asset management as directed to ensure that all company assets are maintained in the best possible condition.
    • To ensure that the section cleanliness and hygiene is of the highest standard.
    • Maintain fridges and stores to ensure they are clean and stocked at the correct levels.
    • Assist in maintaining constant communication between the Kitchen, Management and Front of House staff.
    • Check that meals and functions are set up to standards.
    • Staff food control: cost, quality, and quantity.
    • Attend meetings when required.

    Food & Menu Preparation

    • Assist the Executive Chef/Head Chef/Sous Chef in the following tasks:
    • Implement menus throughout the different outlets and properties.
    • Quality check taste and presentation of dishes to ensure the excellent standard of the food.
    • Ensure that portion size and plating of food are controlled to avoid wastage and maintain a high standard.
    • Ensure that all food is being prepared to the highest standards.
    • Ensure efficient work with the focus on completing the task within the time available and to the standard set.

    REQUIREMENTS, QUALIFICATIONS AND SKILLS

    • Sound knowledge of food preparation and Kitchen hygiene.
    • Sound knowledge and understanding of all dietary and religious requirements.
    • Good knowledge and understanding of stock procedures and control.
    • Good knowledge of product and supply.
    • Basic knowledge of planning, budgeting, and departmental administration.
    • Basic knowledge of creating, implementing, and maintaining written control documents and training manuals.

    Waiter

    KEY FOCUS AREAS

    Food and Beverage Service

    • Welcome guests as they arrive and escort them to their tables.
    • Present menus and provide detailed information about menu items, including specials and promotions.
    • Accurately take food and drink orders from guests and enter them into the POS system.
    • Answer questions about menu items, ingredients, and dietary restrictions.
    • Deliver food and drinks to tables in a timely manner.
    • Ensure orders are accurate and properly presented.
    • Regularly check on guests to ensure satisfaction with their dining experience.
    • Address any complaints or concerns promptly and professionally.
    • Clear dirty dishes, utensils, and glassware from tables.
    • Reset tables for the next guests, ensuring they are clean and properly set.
    • Present the bill to guests and process payments using the POS system.
    • Handle cash, credit card, and other forms of payment accurately.
    • Keep the dining area, service stations, and restrooms clean and organized.
    • Always follow health and safety regulations.

    General Service and Guest Care

    • Collect all information available on guests prior to arrival.
    • Collect guest information while speaking to guests; inform the Supervisor/Head of Department and Management to record and act on guest preferences.
    • Report all guest complaints to your Supervisor/Head of Department and Management immediately.

    REQUIREMENTS QUALIFICATIONS AND SKILLS

    • Knowledge of the highest level of F&B customer service in a luxury environment.
    • Knowledge of wine, cocktails and other beverages served.
    • Knowledge of food, cooking methods, and all menus.
    • Basic knowledge and understanding of stock rotation and control.
    • Knowledge of hygiene and all cleaning products used.
    • Knowledge of the operation of equipment and appliances.
    • Knowledge of all MORE properties and all activities offered.
    • Knowledge of all departments/operations of your property.
