Head Chef at Life & Brand Portfolio

Life & Brand Portfolio seeks an experienced Head Chef to run the kitchen of one of our busy restaurants. Reporting to the Group NPD Chef & Quality Manager, The Head Chef will be responsible for the management and overall responsibility of the kitchen. Supervision, performance management and effective delegation to various staff to ensure an efficient and smooth-running kitchen.

RESPONSIBILITIES OF THE POSITION INCLUDE BUT ARE NOT LIMITED TO:

• Assists in management of daily operational requirements of the kitchen and facility, co-ordinates food production schedules and ensures highest level of food quality, taste and presentation
• Prepare, check and delegate daily production and preparation sheets. This will include an entire daily inspection and walk about of each section, checking of all relevant stock and food items, checking that recipes are measured accurately and executed according to EXECUTIVE CHEFS/OPERATIONAL standards.
• Control food cost by assisting in training kitchen staff on the proper methods of food preparation and handling. Assist the Executive Chef /F &B/Operations Manager by ensuring that ALL recipes and sub recipes, are correctly costed and yields reported. All seasonal changes to dishes are recorded immediately and daily records are kept on any variances that might occur due to seasonality or supply problems.
• The Head Chef must maintain effective communication within the kitchen, be responsive to staff suggestions and concerns and actively work to resolve problems
• Maintain effective working relationships with all departments in the Life & Brand Portfolio.
• Complete daily food orders based upon scheduled events and projected levels of trade, check all orders and request whilst maintain par levels and wastage. Uphold FIFO principles and correct stock rotation and handling and storage.
• Conduct daily inspections of the entire kitchen, scullery, all holding areas, fridges and freezers and storage rooms and promptly act to correct deficiencies found during inspection
• Performs additional responsibilities, although not detailed, as per operational needs and per Executive Chef/GM/Operations Manager request

QUALIFICATIONS, EXPERIENCE, SKILLS AND KNOWLEDGE REQUIRED

• 5+ years in a similar role.
• Experience in dealing with high volume, in a similar environment would be preferable
• Strong Leadership ability;
• Ability to delegate and manage down effectively;
