    Chef Trainer

    PRIMARY PURPOSE

    • Reporting directly to the Food Experience Manager (FEM) the trainer acts as a support to teams and/or individuals in order to fulfil their potential within Wilderness whilst driving the company processes, systems and standards. Work hand in hand with other trainers and be sure to deliver a consistent approach and voice, in line with Wilderness standards as set out by the Operations and/or Service and Standards

    Detailed Responsibilities

    • Ensure that the chefs are delivering the minimum standard as per the cycle menu. Be present for external training trips when required.
    • Making suggestions on new dishes and giving feedback to the FEM on menu items
    • Train chefs on how to use and care for kitchen assets, reporting back to the FEM on any equipment requirements and kitchen upgrades
    • Month end food statistics and training reports are provided to the FEM
    • Ensure that all kitchen equipment is well maintained and that staff are accountable for breakages
    • To ensure that the F & B Managers and chefs keep the fridges and storerooms clean and organized at all times
    • Monitor guest feedback and ensure that the targets set for the classic are met
    • Ensure that the chefs keep the kitchens clean tidy and hygienic

    CANDIDATE PROFILE

    Qualification:

    • Bachelor Degree or Diploma in Culinary Arts

    Experience:                    

    • Minimum of ten (10) years in the food industry.
    • Solid experience in the high-end, luxury safari hospitality market.
    • In-depth knowledge in dealing with diverse food experiences and cultures from around the world.

    Skills:           

    • Outstanding people skills and ability to communicate.
    • Know how to manage and work in a team.
    • Strong verbal skills, both written and spoken.
    • Keen eye for detail.
    • High levels of energy and enthusiasm to drive the guest experience.
    • A desire to improve staff skills and to motivate them constantly.
    • Ability to manage and to meet set targets.
