    Junior Chef

    Description

    • The Faircape Group operates 6 high end retirement/lifestyle villages in the Western Cape.
    • We are looking for a Junior Chef to assist the Chef at Heritage Manor in Somerset West.
    • If you are energetic with with a creative flair and want to work for a well established company, this is the ideal role for you!
    • Reporting to the Chef, the incumbent will assist in taking control of the kitchen (preparation, safety and hygiene, staff management).

    The job duties include, but is not limited to the following:
    Meal Preparation

    • Preparing, cooking and presenting dishes in accordance with best practice
    • Oversee that the kitchen staff are following correct instructions and performing daily duties
    • Prepare ingredients to use in cooking (chopping and peeling vegetables, cutting meat etc.)
    • Check food while cooking to ensure cooking temperature guidelines are followed
    • Ensure staff are following procedures for food and other items to be stored properly at appropriate temperatures
    • Ensuring that dishes are produced to the required standards of quality and attractiveness before serving.
    • Assisting in the preparation and cooking of food for special functions and “special days” as and when required.
    • Observe and test foods to determine if they have been cooked sufficiently, using methods such as tasting, smelling, or piercing them with utensils
    • Weigh, measure, and mix ingredients according to recipes
    • Cook on several different orders simultaneously.
    • Measure ingredients required for specific food items being prepared.
    • Operate large-volume cooking equipment such as grills, deep-fat fryers, or griddles.
    • Read food order slips or receive verbal instructions as to food required by waiter, and prepare and cook food according to instructions.
    • Bake breads, cakes, muffins and scones when required
    • Verify that prepared food meets requirements for quality and quantity.
    • Prepare meals from a recipe and manage quantities in terms of recipes


    Quality Control

    • Check quality of ingredients
    • Monitoring portion and waste control


    Hygiene and Safety

    • Ensuring you and your team have high standards of food hygiene and follow the rules of health and safety
    • Ensure GMP (good management practices) guidelines followed
    • Ensure that the food prep area and kitchen are cleaned and sanitized at the end of shifts
    • Inspect food preparation and serving areas to ensure observance of safe, sanitary food-handling practices
    • Maintain sanitation, health, and safety standards in work areas.
    • Ensure that the cleaning of all surfaces, floors, walls and drains are done daily


    Coffee Shop

    • Ensure the coffee shop has muffins and scones available daily by 8h00
    • Ensure that the coffee shop produces fresh products of high quality


    Staff management

    • Assist in training kitchen staff
    • Ensure staff are utilizing their time productively

     

    • Stock management, record keeping and administration
    • Rotate stock items as per established procedures
    • Receiving deliveries accurately, following company procedures
    • Monitor stock and reporting when there are shortages
    • Restock kitchen for subsequent shifts
    • Ensure all records of the kitchen are completed– cooking temperatures, holding logs, fridges and freezer temperature
    • Check that daily charges have been done by the waiters, if not, do daily charges
    • Requirements
    • Chef's diploma / qualification from a registered tertiary education provider
    • At least 2 years work experience in similar environment
    • Strong knowledge of proper food handling procedures
    • Strong knowledge of GMP practices
    • Able to work as part of a team in a busy kitchen atmosphere
    • Knowledge of various cooking procedures and methods
    • Quality orientated
    • Ability to follow all sanitation procedures
    • Excellent communication skills
    • Strong administration skills
    • Excellent physical condition and stamina


    Working hours: You will be required to work 16.25 shifts per month, according to the roster, from 06h30 to 18h30, Normal working days are Monday to Sunday. Need to be flexible to accommodate the standby procedure of the company.

    Shift Leader (Registered Nurse)

    Duties include but are not limited to:
    Clinical handover

    • Do morning handover according to ISBAR procedure with Shift leader on opposite shift and may delegate handover to duty Sr according to allocation
    • Ensure all reporting up to date for handover and all information checked when receiving handover

    Administration and reporting

    • Daily reporting to the NSM on any interventions during the shift
    • Thorough reporting during shift change
    • Ensure all staff are fully informed about all related policies and procedures
    • Allocate staff on shift according to patient needs and operational requirements and specific activities and information from the handover process
    • Do changes in staff allocation throughout the shift according to changes in needs and requirements
    • Ensure full complement of staff on duty
    • Ensure standby lists is populated
    • Performance appraisals with staff

    Medication management and administration

    • Ensure all blister packaged medication is available on the trolley and medication not prescribed anymore are removed from blister pack
    • Do rounds, check for sufficient consumption and administer all medication to residents as per the scripts
    • Check for any side effects of medication and adjust accordingly by phoning the doctor and arranging for new script
    • Manage medication change process. Phone Dr to get script, send script to pharmacy, make changes on ECP and place copy on residents file

    MDT and interaction with professionals

    • Manage all admissions to the unit with the HCA and ensure all relevant requirements are in place and admission allocated to specific people. Bed allocation according to diagnosis and NSM input
    • Manage all documentation for admission, progress and discharges in sub-acute facility with HCA (applicable only in facilities where a sub-acute licence is in place)
    • Ensure necessary documentation is completed and sent for review
    • Draw up discharge plan and discuss with family
    • Educate and manage staff on health and safety related issues
    • Maintain effective infection control practices

    Stock management

    • Oversee and do dressings, wound care and pressure care
    • Deal with skin lesions
    • Do catheter care and flushing intervention
    • Do daily resident rounds and measure vitals
    • Ensure patients are weighed upon admission and according to care plan
    • Assess patients on specific areas of concern and adjust the care plan
    • Monitor: Mobilization, respiratory distress, neurological observations and emotional status
    • Risk management
    • In-house staff training
    • Patient and resident emergency response

    Requirements
    Qualifications SANC registered as Registered Nurse. Up to date BLS.

    • Experience and Knowledge - Relevant experience as a Shift Leader, in the fields of medical/surgical (sub-acute and long- term care), palliative care, rehab, orthopedic, care for patient for IV therapy / chemo therapy / frail care and dementia care.
    • Skills and Attributes - Strong interpersonal skills, professional communication, ability to work under pressure, managerial skills, making sound decisions, computer literate, professional, focused, fluent in English, proactive, organisational skills, be able to converse with people on different levels - staff, families, MDT and other professionals coming into the facility. The incumbent should be well presented and professional.
    • Working Hours - Normal working days are Mondays to Sundays, according to the roster. You will be required to work 16.25 shifts per month. Day shifts will be worked between 07h00 to 19h00 and night shifts between 19h00 and 07h00.
